yup, the role of resistant starches is something I've been keen on diving deeper into. Did a CGM on myself comparing regular warm basmati, sticky rice and cooled basmati. Cooled/chilled basmati was much less glycemia inducing, the graph responded very similar to fiber. Was surprising.
